New York Boneless Strip Loin Steak, Center Cut Wagyu SRF Black (18 oz)

The marbling of fat is a key contributor to the tenderness of any meat. Wagyu cattle are meticulously raised to ensure an unparalleled level of uniform fat marbling. High-fat meals three times per day and a stress-free environment are key in raising this breed of cattle, which can cost a farmer ten times as much as the average US Angus. The extra effort is well worth it and has earned Wagyu a reputation as some of the most tender beef in the world.

Known as The Best Beef In The World, Wagyu will melt in your mouth and give explosions of flavor you’ve never had before. Tender muscles surround pockets of perfectly marbled fat. Which is what causes that burst of juicy flavor. Because of the richness of this cut a little bit goes a long way. Indeed, 18oz. will be enough to feed the whole family. The fat contained in the center cut is relatively less saturated than most meats gram for gram which makes it a healthier option than other high saturated meats. Also, the lower saturated fat gives it a smooth butter like texture.

Preferred cooking method: Pan grilling or cooking on a griddle is the best way to cook Wagyu. BBQing this meat is highly discouraged because you will lose the flavoring as it drips off.

Preferred seasoning: Coarse salt is all you need because you don’t want to cover the flavor with anything

Gaucho tips:

  1. Bring meat to room temperature before cooking
  2. Slice off a piece of fat from the outer part of the meat to grease the pan. The Wagyu will provide the rest!
  3. Slice meat against the grain before cooking. No more than an inch in thickness.
