New York Boneless Strip Loin Steak, Center Cut USDA Choice (1 lb)

New York Strip Steak is also known as striploin, sirloin, ambassador steak, among others. It is cut from the short loin of the cow, an underused muscle with a high fat content. This results in a wonderfully tender piece of meat with excellent beef flavor. It is a great “beginner” steak for home cooks, since it maintains its tenderness over high heat.

One of the most popular choices at the grill is definitely the New York Strip steak. It’s lean yet perfectly marbled creating a premium tender steak for the BBQ. The popularity of this cut extends well outside the USA. It is also a great beginner steak because it is so easy to cook. This cut is also versatile enough it can be substituted in recipes requiring specific cuts of beef.

Preferred cooking method: Grilling will induce the flame flavor that can’t be replicated on the stove. However, you can pan sear them and then put them in an oven.

 Preferred seasoning: we just use salt and black pepper. However, feel free to try a BBQ sauce or marinade of your choice!

Gaucho tips:

  1. Use 1 teaspoon of coarse kosher salt per pound of meat
  2. Bring your steak to room temperature to ensure even cooking
  3. Let the meat rest 5-10 minutes before cutting into it
